{Healthier} Mashed Potatoes
On the night of my birthday when I was a little girl, my parents allowed me to choose what to eat for dinner and I would always ask for fried chicken and mashed potatoes. This is still my favorite meal **
Even today, hot creamy mashed potatoes are one of my favorite side dishes so I was so excited to learn how to prepare mashed potatoes in a new, healthy way!
By substituting extra virgin olive oil and skim milk for heavy cream and butter, the potatoes have less calories but still the same great flavor and cream texture – Eat up!
Ingredients
1. 2 lbs. Red Potatoes
2. Salt and Pepper, to taste
3. 1 Tbs. Extra Virgin Olive Oil
4. 1 Cup Skim Milk
Instructions
1. Cover the potatoes with water and bring to a boil. Reduce heat and simmer until tender, 15 to 18 minutes.
2. Strain potatoes and put potatoes back into pot. Add extra virgin olive oil, skim milk, and salt and pepper. Mash ingredient together, to taste.
